Acetobacter and Gluconobacter convert ethanol into acetic acid, resulting in vinegar-like off-flavours and oxidation.

The most widely used detection medium is:

  • Glucose Yeast Extract Calcium Carbonate (GYC) Agar


Standard Microbiological Testing Workflow
